We've been making wine for years and much like the wine itself, we've improved with age.

La Mare wines include:

Bailiwick: A dry red wine with soft tannins and long finish.  Made from Pinot Noir, Regent and Rondo grape varieties. Extended cold soak, fermentation and maceration followed by eighteen months cask maturation in old and new French oak barriques has produced a wine of balance and structure. Black cherry and raspberry fruit on the nose integrated with spiced oak character. This wine will continue to develop in bottle with careful cellaring becoming smoother and more complex. Matches well with roast dishes, game and cheese of character.

Sainte-Marie: A medium dry white wine made from a blend of Orion and Seyval Blanc grapes. The wine was carefully fermented using a Burgundian yeast strain, in stainless steel tanks under cool conditions. This combination has created a wine that displays ripe citrus and herbaceous aromas, delicate pome fruit flavours and well structured acidity. Over all it displays the tipicity of the site similar in character as the fresh North West winds that prevail. An excellent food match with locally caught scallops or chancre crab.

Perquage: This fruity and off dry Rose is made from Regent, Rondo and Seyval Blanc grapes. It has red berries and candy floss on the nose and palate and has a rounded and clean finish. Designed to depict the ripe fruit of the season it matches well with soft cheese, bbq foods and sunshine. It is made using the Saignee method which involves ‘bleeding’ a little red juice from a red wine ferment and blending with white grape juice. A cool fermentation in stainless steel follows to retain the freshness and bright fruit character.

Lillie: Named after the ‘Jersey Lily’ Lillie Langtry, this is an elegant dry sparkling Rose (accent needed) made using the Methode Traditionelle. The grapes are a blend of Pinot Noir and Seyval Blanc. Extended cellar ageing before release has created a wine of depth and complexity. It has cherry aromas and toasted brioche on the nose, elderberry on the palate and a refined mousse. Perfect chilled as an aperitif of with a bowl of strawberries.
